Yu-Xiang Shredded Pork
(Sautéed Shredded Pork in Garlic Spicy Sauce)

Ingredients
Pork loin (cut thin strips)2/3 lb (300g)
Basic marinade (dark) 1 portion
Dried Black wood-ear fungus (soaked to rehydrate/julienned) 0.7 oz (20g)
Cooked bamboo shoot (julienned)1/4 lb (113g)
Cooking oil2+1 Tbs
Yu-xiang sauce 1 portion

Instructions
1.Prepare the Yu-Xiang Sauce.
2.Marinate the pork with the Basic marinade (dark) for 10 minutes. Mix the pork with 2 tbs. of oil right before cooking.
3.Place 1 tbs. of oil and pork in a heated non-stick pan; sauté until 80% done. Set the pork aside.
4.Add part A from the Yu-Xiang Sauce to the same pan; sauté until aromatic. Put in the wood-ear fungus and bamboo shoot; sauté for 1 minute.
5.Add the pork and part B from the Yu-Xiang Sauce. Quickly stir until all ingredients are well combined and the sauce is thick.

做法
1.準備魚香醬汁
2.肉絲用基本醃料拌勻醃10分鐘,要炒之前加2大匙油拌勻。
3.不沾鍋燒熱後加入1大匙油和肉絲用中火炒到肉絲8分熟。盛出肉絲備用。
4.用原鍋加入魚香醬汁A料爆香,再加入黑木耳和竹筍炒1分鐘。
5.加入肉絲與魚香醬汁B料用大火翻炒汁所用材料充分混合及醬汁黏稠即可離鍋。
